Tuscan Zuppa Toscana

I made some Tuscan Zuppa Toscana and I have to say it is easy to make and very good.

Zuppa Toscana means Tuscan Soup and this is an Italian soup that is is full of flavors.

This soup is a creamy tomato consistency.

Tuscan Zuppa Toscana

Ingredients:

2 tbsp butter

1 small onion chopped

2 cloves garlic or 2 tablespoons of minced garlic

4 cups chicken broth

8 oz cream cheese

1 lb Italian sausage (mild or hot)

2- 14 oz can diced tomatoes I left one chunky and mixed one in the bullet for  2-3  seconds.

1 zucchini medium-sized chopped small

4 cups chopped spinach

2 tsp dried basil

2 tsp dried oregano

3 bay leafs

parmesan cheese

1/4 tsp cayenne pepper (to taste)

Instructions

Melt the butter over medium-high heat and add the onion, garlic, and Italian sausage to cook for 4-5 minutes or until onion is soft and meat browned.

 

Pour in three cups of the chicken broth then add the zucchini, basil, oregano, bay leaf, cayenne pepper (if using), and diced tomatoes.
Bring to a boil then lower the heat to simmer.
Place the remaining cup of bone broth and cream cheese in a blender and blend until smooth.  I used my bullet for this. Pour into the rest of the soup and stir.
Mix in the chopped spinach and once wilted serve the soup or allow to simmer for another half hour or more for the flavors to combine.
Serve topped with shredded parmesan cheese.

Baked Parmesean Squash

I had seen this recipe and wanted to try it.

We put up a lot of a squash this year so we have plenty to experiment with.

Cut yellow squash or zucchini into thin circles and place on large baking sheet with parchment paper first.

Sprinkle salt, pepper and garlic powder. Then sprinkle parmesean cheese .

Bake at 425 degrees for 15 – 20 minutes until parmesean is golden brown.

This was really good and something different to do with squash. A kid that does not like veggies much would love this.

 

 

Cabbage Soup Recipe

I made some cabbage soup last night for something a little different to eat and it was really good.

Recipe:

1 – cabbage cut into chunks

1  medium sized onion

Olive Oil a couple of tablespoons

Sautee the above

Two cans of diced tomatoes

A couple of dashes of red pepper depending on how hot you like things.

Carrots 5 large ones slice thin or a package of frozen ones that are sliced.

Celery 3 – 4  good stalks chopped up.

Garlic I used a tablespoon of minced garlic

2 cups of water

2 tablespoons of Chicken Bouillion I like the “Better than Bouillon” one.

1 can of  black eyed peas with juice

Cook unil your carrots are done.

The only thing I would do different next time is add in some good cooked sausage but I did not have any.

Meal Prep Containers

We have bought many of the meal prep containers from Amazon over the last five years.

They can go from freezer to microwave or just in the fridge for leftovers.

At first, we had the rectangle ones then I bought the divided rectangle ones and last I have bought the round ones.

The last ones I bought were a couple of weeks ago and they were $15.00 for 30 of them.

Meal Prep Containers

They last pretty well and its easier than finding a lid to a million Rubbermaid containers that are different sizes. Just remember if you get the same size from different places the lids will probably be different. I honestly hate playing the lid hunt game.

I love using them for leftovers and for lunches.

These work great to take meals to someone special. I use them to take meals to my mother n law and normally I take 3 meals at a time. She loves it because she never knows what she might be getting for dinner.

We eat chicken probably three times a week so I try to come up with different ideas using chicken so it does not get too boring.

Here is one of our favorite recipes.

Chicken Spaghetti:

Brown 8 – 10 chicken breast tenderloins in a little butter.

Then use that same pan to brown some onion 1/2 of a medium sized onion.

Cook the spaghetti noodles

In a bowl mix a large can of cream of mushroom soup, with one can of Rotel tomatoes, and one can of green chilis. The green chilis have this aroma that smells throughout the house and makes your mouth water.

Cut the chicken into bite size pieces stir into the spaghetti add the liquid and 2 cups of cheddar cheese.

I also top with cheddar cheese and bake in the oven for 45 minutes. I cover the pan with foil for all but the last 5 minutes.

Unstuffed Cabbage

My husband and I both love cabbage and we really like cabbage rolls.

I hate making them they take forever to get all rolled up.

I found a recipe for unstuffed cabbage rolls and let me tell you it was super good and something different to cook. I am always looking for something different.

1 –  2 # of 80% lean ground beef

1 Cabbage chopped into chunks

Dash of salt

Black Pepper to taste

1 cup chopped up onion

2 cloves of garlic minced

8 oz tomato sauce ( if you want it moister you can add more)

8 oz diced tomatoes

1/2 – 3/4 cup beef broth for flavor

2 cups cooked rice – Optional

All you have to do is brown the ground meat, sautee the garlic and onions.

Cut your cabbage into chunks. Combine everything and heat over medium heat in a large pan until the cabbage is done 20 minutes at the most. Make sure to stir several times.

This easy 30-minute meal it is quite the time saver and very tasty.
