It is about that time of year time to start digging up the sweet potatoes.
It is a lot of work I let Jack dig and I wash them off.
He did one of the smaller beds and dug up about 3 gallons.
What we have found out is they grow better in the raised beds because we can get the dirt like we want it and keep the rabbits from eating the tops off.
They do make some pretty blooms but the plants spread everywhere. Next year we will make new raised beds further away from everything else.
Growing things in a garden is very satisfying and the reward is your bounty of vegetables.

I’ve never seen blossoms before. What do you do with 3 gallons of sweet potatoes?

I wish that is all there are but I think there is about 7 – 8 more gallons at least. We have ate them 2 times. Cooked on the griddle and sliced in chunks and baked. We rarely eat white potatoes because of Jacks diabetes. Jack gets carried away sometimes with planting and we end up giving away more than half of what we plant.

We give away a lot of vegetables from the garden. We love baked sweet potatoes and stir fried but 2 x a week is it for us.
